Mexican Street Corn Made Me Rethink Corn Dogs
In the U.S., corn means corn dogs at a fair—fried, greasy, dipped in mustard. Then I tried Mexican street corn (elote).
Grilled, brushed with mayo, rolled in cotija cheese, dusted with chili powder—it was chaos on a cob. Messy, salty, tangy, spicy. My hands were a disaster, but my taste buds were dancing.
It hit me: why did we settle for boring fair food, when just south of the border, corn is celebrated like a festival?
Sometimes the street beats the fairground.
