Strain the mixture through a sieve. ❷ Set aside 100g of the peach puree for the cake layers. In a saucepan, heat the remaining peach puree with sugar and lemon juice until thickened. ❸ Pour the peach jelly mixture into a container and let it cool in the refrigerator. ▷Cake Layers - 120g of cake flour - 85g of beaten eggs - 400g of whole milk - 100g of peach puree - 35g of sugar - 25g of melted butter ❶ Melt the butter over a double boiler and add the milk. Stir well, then add the peach puree and mix until combined. ❷ Sift in the cake flour and mix until there are no lumps. Add the beaten eggs and mix again. Sieve the batter once or twice. ❸ Heat a non-stick pan over low heat. Pour a spoonful of batter into the pan and swirl it around to cover the bottom.
