Chimichurri steak that even a first-timer can nail.
Tried making chimichurri steak at home for the first time, and the flavors really surprised me. Started by marinating the steak in salt, pepper, and a bit of olive oil. While the steak rested, I whipped up the chimichurri: fresh parsley, garlic, red wine vinegar, oregano, and a good amount of olive oil. Letting it sit for a bit helps the flavors come together.
For sides, I went with roasted potatoes—just tossed in olive oil, salt, and smoked paprika, then baked until golden. Also threw some zucchini and bell peppers on the grill for a little char. The steak cooked quickly on high heat, just a few minutes per side for medium rare. Sliced it up and spooned the chimichurri over the top. The herby sauce cuts through the richness of the steak, and the potatoes and veggies round it out. Definitely worth the effort for a solid dinner.
