Tkemali is a tart, herby plum sauce from Georgia (the country, not the state) that totally caught me off guard during a trip to Tbilisi. It’s made from wild plums, garlic, and loads of fresh herbs, and it’s usually served with grilled meats or potatoes. The flavor is tangy, a little sour, and super fresh—nothing like the sweet BBQ sauces I’m used to in the US. I remember being at a family dinner and everyone just kept pouring it over everything.
