That ginger hit is what makes it tinola-ish. Toss in the mussels and let them open up, then pour in water or broth. Season with fish sauce and pepper. Let it simmer for a few minutes. Add greens like chili leaves or spinach. Let them wilt and you’re basically done. It’s wild how Filipino recipes just swap proteins like it’s nothing. My brain still expects chicken in tinola, but mussels totally work. Had to laugh when I realized this was Tinolang Tahong. Picked up a live sea urchin at the fish market after hearing so much about uni. The spines were still moving, which was a little intimidating, but I put on thick gloves and got to work. Flipped it over, found the mouth, and used kitchen scissors to cut around the base. The inside was filled with dark liquid, so I drained that out over the sink. The orange roe looked strange but fresh. I scooped it out gently with a spoon and rinsed it in salt water to get rid of any residue. Ate a piece raw right out of the shell—creamy and briny, not what I expected. Added a splash of soy sauce to another piece, which really brought out the flavor. Keeping the rest chilled for later. Skinning fish used to stress me out, but once I figured out the right knife and technique, it’s not bad at all. Laying the fillet skin-side down and starting at the tail end really helps keep things under control. A sharp fillet knife is key—dull blades just shred the meat. I always put a damp towel under my cutting board so nothing slides around. When I make that first cut near the tail, I keep the blade almost flat and just work it between the skin and flesh, pulling the skin tight as I go. Sometimes there’s a little patch of skin left, but I just trim it off with the tip of the knife. Here's what we discovered: Specialized Rock fish seller: This stall drew a crowd of seafood enthusiasts. The Rock fish looked incredibly fresh and caught our attention. Rock Crab vendor: While not listed on the whiteboard, we spotted this boat and secured some live crabs before they were even unloaded. Highly recommended! Other popular options include cod, Halibut, and more. Keep an eye out for sea urchin, though we didn't find any this time. We immediately cooked the crabs at home, and their freshness and subtle seawater flavor exceeded our expectations.
