Egyptian falafel (Taameya) made with fava beans is on another level. The outside is super crispy, the inside is fluffy and green, and the flavor is packed with herbs and a little spice. I tried these in Cairo and was blown away by how light they were compared to the chickpea version I grew up with. The sesame and coriander seed crust is genius.
