While the rice cooks, heat 2 tbsp vegetable oil in a large skillet or wok over medium-high. Toss in 1 lb thin-sliced chicken breast, season with salt and pepper, and stir-fry until just cooked through (about 5-6 min). Add 3 minced garlic cloves and 1 tbsp grated ginger. Stir for 30 seconds until fragrant, then add 2 cups broccoli florets. Stir-fry 3-4 minutes. Pour in 1/4 cup soy sauce, 2 tbsp oyster sauce (optional), and a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) if you want a thicker sauce. Stir until glossy.
